I hated corporate and sitting behind the computer crunching numbers. After many mornings of laying in bed and staring up at the ceiling before going to work, I decided to quit my job and travel down to Mexico on a culinary tour. I discovered that chocolate is enjoyed in a completely different way. It’s a part of their everyday life. I came back here and decided that people don’t really understand the true taste of chocolate and how chocolate I processed. After 5 years of R&D, this is the purest form of chocolate that you can eat that is truly the way that it was done over 2000 years ago – no tempering, conching or various steps of refinement. This is stone ground chocolate from bean to bar.The connection from the plantation, grower, artisan to the table is why I am passionate about bringing a 2000 year old tradition back to life.
